'Rendang is an Indonesian meat dish originating from the Minangkabau, but it also traditionally served among the Malay community. it has incredible depth of flavor with many layer taste of spices. it is slow cooked in coconut milk until the meat become tender. most of people cook it with beef but chicken, pork, and lamb also a good option Ingredients: 1 kg beef chuck, cut into cube 200 gr baby potatoes 150 gr grated coconut 100 ml veg oil/coconut oil 1 liter coconut milk 1 liter water 2 Indonesia fresh bay leaves 2 kaffir lime leaves 2 star anise 2 cinnamon 10 cardamom pods 6 cloves 1 tsp cumin seed Salt and palm sugar to taste To blend spices: 16 shallot 6 garlic 1 thumb size ginger 1 thumb size galangal Half thumb size turmeric 15 red curly chilies 25 red bird eyes chilies 2 lemongrass (white part only) Instructions: 1. Dry toast 150 gr grated coconut with medium heat until brown 2. Finely chopped spices and Blend it all in food processor until fine paste 3. Add 100 ml oil into a pot and stir fry spices until fragrant 4. Add in Indonesia fresh bay leaves, kaffir lime leaves, cinnamon, star anise, cardamom pods, clove and cumin seed 5. Add beef and continue with baby potatoes and brown grated coconut 6. Add salt and palm sugar to taste 7. Pour in coconut milk and water 8. Bring to boil, cover and simmer for 2-3 hours on low heat Notes: 1. When toast the grated coconut make sure keep stirring to prevent burned, burned grated coconut taste bitter 2. If you don\'t want to use grated coconut , change the recipe from 1 liter coconut milk to 1.5 liters 3. Add a little bit water into food processor, it makes the spices easier to blend 4. Make sure you taste the stew, is it salty enough, if not , you can put more salt 5. Keep stirring when you add coconut milk until it boil and then turn low the heat, cover it and simmer until meat become tender for around 2-3 hours 6.
