Equipment Needed: --Chef\'s Blade Berti 8\" Chefs Knife (Jeff\'s knife...stupid expensive but simply the best knife we\'ve ever owned) http://amzn.to/2xJxHMP Global Chefs Knife (Micki\'s first knife, much cheaper and served her well) http://amzn.to/2xSZsoo --Food Processor Cuisinart Pro Custom 11-Cup Food Processor (ooh, pretty) http://amzn.to/2x5Ahuy --Veggie Steamer Our Asparagus Steamer (that we use for everything) http://amzn.to/2fG6PZq --Colander http://amzn.to/2x5x5PK --Cheese Cloth http://amzn.to/2x5TVqt --Silicone Spatula http://amzn.to/2ygcywG Ingredients: --1 Head Cauliflower --2 Tbs Butter --2 - 3 Tbs Cream --Kosher Salt --Black Pepper Instruction: 1) Wash and separate cauliflower by cutting in half and breaking off large florets. Do not use bottom part with green leaves as they can be bitter, but utilize everything else. \"Parts are parts.\" 2) Place florets into steamer basket. Add water enough to prevent bottom from scorching while steaming. 3) Place on burner set on high, with lid slighly askew, until steam tendrils are observed. Close lid and reduce heat to medium low. Steam for 15 to 20 minutes, until cauliflower has a tender, squishy consistency. 4) Drain into colander lined with either cheese cloth or a large dish towel. Squeeze to remove any excess water. Careful, it will be HOT. Let drain. 5) Add cauliflower to food processor. Pulse food processor 2-3 times to rice cauliflower. Scrape sides of bowl. 6) Add butter, salt and pepper. Pulse another 2 - 3 times. Scrape sides of bowl. 7) Add 2 Tbs cream (or milk, but we like cream). Let food processor run for 10 - 15 seconds or so, until creamy consistency develops. Taste. Adjust cream, salt and pepper if needed. Pulse again if needed. 8) Serve or move to a dish to be placed in warming oven.
