'Smoked Bison Brisket Smoking is a primitive form of cooking. There is nothing quite like it. You can smoke over an open flame, in a barrel, in a shack, and in this case, a pellet grill. I smoke a ton of beef briskets. We\'ve done over a hundred of them the last few years, so I figured it was time to try our hand at the bison brisket. I love bison meat. Bison is some of the best steaks around and smoking them is a good place to start. The bison brisket is considerably smaller than that of beef. It also is far leaner. This presents a challenge when smoking as a ton of the great flavour produced throughout the long slow cook of the beef brisket comes from the fats slowly melting away. To achieve a wonderful moist piece of meat post smoke we need to supplement this fat. In this video, I show you how to season the brisket, and smoke it. I show you that soaking the brisket overnight in beef broth improves the moisture content of the brisket. We also coat the bison brisket in vegetable oil before applying our rub. The results were AMAZING! We smoked this brisket for roughly 8 hours. I loved this brisket. Bison brisket is different from beef, but it is amazing in its own way. It tastes different from beef but is just as good. It requires a few more steps to achieve the awesome flavour and moisture that you get from beef, but it is well worth it.
